The following ingredient combo (all raw vegan superfoods!) is something Isaac discovered recently... the taste AND texture is just like EGGS!! My favorite so far is the "scrambled" version, which has such an outrageously similar flavor and the curdy consistency of scrambled eggs, that the first time I ate it, my mind had to tell my body that no, I'm not actually eating eggs... LOL!
It's such a simple recipe, too! I LOVE 4-ingredient recipes that somehow turn out this amazingly yummy.
Here goes...
EGGS!
- 1 cup coconut milk (instructions below)
- 1 ounce soaked Irish Moss (soaking instructions)
- 1 Tbs Non-GMO Lecithin
- 1 Tbs Nutritional Flakes
Soak the Irish Moss for at least 24 hours per these instructions.
Make the coconut milk: for the flavor most similar to eggs, I suggest using Coconut Flakes to make a nut milk (since they're from mature coconuts which are less sweet and have a more "eggy" taste than young coconuts), by blending 1 cup of dry Coconut Flakes with 4 cups of water, then straining the milk out with a nut milk bag or cheesecloth.
Blend the coconut milk with the Irish Moss until smooth. Then add the Lecithin and Nutritional Flakes and blend again. Let the mixture sit for about half an hour; it will become thicker and develop that "curdy" consistency that scrambled eggs have!
The recipe above is a single batch... we pretty much make double to quadruple batches at this point
We love adding extras to this once it's done! First taste it by itself, and be amazed... We love adding Sun Fire Salt, cayenne pepper, ground white peppercorns, chopped veggies like tomatoes, onion and sweet peppers, and diced black olives. I'm sure you'll have your own favorite extras after you try this a few times!
