This recipe is the perfect example of the magic that Irish Moss brings to desserts! Light, fluffy, satisfying and intensely flavorful, this Strawberry Parfait is the perfect summertime enjoyment! We slightly modified this recipe from Cafe Gratitude's dessert recipe book, Sweet Gratitude.


Strawberry Parfait

- 1 ounce soaked Irish Moss (weight) (instructions)
- 1 cup almond milk (we usually use brazil nut milk)

Dice the soaked Irish Moss into small pieces for easier blending. Blend above ingredients in a high-powered blender until Irish Moss is completely broken down. Add to blender:

- 3 cups chopped strawberries (12 ounces weight)
- 1/2 cup Vanilla Agave Nectar
- 2 Tbs lemon juice
- 1/8 tsp Sun Fire Salt
- extra vanilla powder or liquid vanilla (optional)

Blend well until smooth and creamy, then add:

- 2 Tbs Non-GMO Lecithin powder
- 1/2 cup Coconut Oil



Resume blending until lecithin and oil are fully incorporated. Pour into parfait glasses or other serving glass. Set in fridge for 30-45 minutes (or longer, and it will be colder!). Garnish with fresh strawberries.

This parfait is best on the day it is made but will keep for at least two days. Store covered parfaits in the fridge.

These are super addictive in the summer!
